Who is Matteo?

Matteo Ferrantino was born in Apulia, Italy, and left his homeland for the first time at the age of 18. He went to Mallorca, where he started working as a cook in a very simple restaurant. After a few years, he was introduced by chance to Mr. Roland Trettl, the then well-known Ca's Puers man, whom everyone on the island knew. This eventually led him to this top restaurant, which marked his personal entry into fine dining. Matteo Ferrantino has always enjoyed cooking, from day one, but after this experience, something new began to grow inside him—a kind of vision. The way of approaching ingredients was completely new to him and had quite a wow effect.

The Career

This approach at Ca's Puers had a tremendous impact on his career. All of his later stations were shaped by this mindset. He worked for 5 years with “the best chefs in the world” like Eckart Witzigmann and Roland Trettl at Hangar-7, and after this incredible experience, he decided to embark on a new journey. This continued in Portugal at Villa Joya, where for the first 5 years he was inspired by Dieter Koschina’s crossover cuisine as a sous-chef, and then worked another 5 years side by side with him as head chef. However, it was not the fulfillment of his dream. Then came the moment when he was able to open his own restaurant in Hamburg in 2017. It is called “bianc” and is defined by the pure identity of Matteo Ferrantino with a unique, Mediterranean concept. Here, cooking is done with heart and soul, combined with brilliant creativity!
